Ask Sara, the Equal Food Scientist

Q:I've heard that Equal loses its sweetness at high temperatures. Is that true? How hot can Equal get and still taste good?

A: Depending on the kind of food/beverage, there may or may not be loss in sweetness. For example, aspartame, the sweetening agent in Equal, can withstand the high-temperature, short-time process commonly used for dairy products and juices. In recipes that require prolonged heating or baking, there could be a decrease in sweetness. It all depends on the combined effect of temperature, pH and time.
