Serves 8 2 teaspoons canola oil
1 cup diced red bell pepper
1/2 cup sliced green onions
2 tablespoons curry powder
3 cups hot cooked rice
6 packets Equal® sweetener 2 tablespoons lime juice
1/2 teaspoon salt
1 can (20 oz.) pineapple chunks, drained
1 can (15 oz.) black beans, rinsed and drained
1/2 cup salted cashews
Substitute 1/4 cup Equal Spoonful for the packets.
TIP: White OR brown rice may be used.
