Cream Cheese and Jelly Cookies

Two favorite ingredients combined in a cookie that is both tasty and stores well. Reduced fat cream cheese, Equal® and sugar free preserves help reduce the calories.
Cream Cheese and Jelly Cookies
Ingredients
- 3/4 cup butter, softened
- 1 package (8 ounces) reduced-fat cream cheese, softened
- 8 packets Equal sweetener*
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup cherry OR seedless strawberry sugar-free preserves.
*Substitute 1/3 cup Equal Spoonful for the packets.
Preparation
- Beat butter, cream cheese and Equal in a medium bowl with an electric mixer until fluffy. Mix in flour and salt until well combined. Refrigerate, covered, 2 to 3 hours or until dough is firm.
- Preheat oven to 350°F.
- Roll dough on lightly floured surface into circle that is 1/8-inch thick. Cut into 3-inch rounds using cookie cutter. Place rounded 1/4 teaspoon sugar-free preserves in center of each round. Fold rounds in half and crimp edges with tines of a fork to seal. Place on cookie sheets. Pierce tops of cookies with tip of a sharp knife.
- Bake 10 to 12 minutes or until lightly browned. Cool completely on wire racks.
- Makes 3 dozen cookies, 1 cookie per serving.
