Peach Cobbler
Serves 6
This dessert features canned sliced peaches flavored with lemon juice and a hint of cinnamon in a slightly thickened sauce. It’s topped with prepared pie pastry.
Ingredients
- 3 cans (15 oz. each) canned sliced peaches in extra light syrup, drained
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 18 packets Equal® sweetener*
- 1 teaspoon vanilla extract
- Pastry for single crust 9-inch pie
- 2 packets Equal sweetener**
- 1/4 teaspoon ground cinnamon
*Substitute 3/4 cup Equal Spoonful for the packets.
**Substitute 4 teaspoons Equal Spoonful for the packets. Substitute 2 packages (16 ounces each) frozen unsweetened sliced peaches, thawed, for the canned. Increase Equal to 24 packets (1 cup Equal Spoonful).
Preparation
- Preheat oven to 400°F.
- Place peaches in medium saucepan. Toss with cornstarch, lemon juice, 1 teaspoon cinnamon and salt. Cook on medium heat, stirring constantly until mixture thickens. Remove from heat. Stir in Equal and vanilla until dissolved. Spoon hot peach mixture into an 8-inch square baking pan.
- Meanwhile, for Topping. roll pie pastry on floured surface to form a 9-inch square. Place pastry over hot peach mixture. * Trim and flute edge. Cut a few slits in top to allow steam to escape. Sprinkle top of pastry with combined Equl and cinnamon.
- Bake 25 to 30 minutes or until pastry is crisp and light golden in color. Serve warm or at room temperature.
