Tropical Layer Cake

A banana and citrus flavored cake that is baked in layers, topped and filled with a cream cheese and pineapple mixture. A great special occasion cake.

Ingredients
CAKE
- Cooking spray
- 2 ripe bananas, peeled, mashed
- 2 eggs
- 1-1/2 cups lite vanilla flavored nonfat yogurt
- 1/4 cup butter, softened
- 1/4 cup frozen pineapple-orange juice concentrate, thawed, divided
- 3 cups cake flour, unsifted
- 30 packets Equal® sweetener*
- 1 tablespoon baking powder
- 2 teaspoons baking soda
- 1/2 teaspoon salt
FROSTING
- 12 ounces reduced-fat cream cheese, softened
- 12 packets Equal sweetener**
- 1 can (8 ounces) crushed pineapple in juice, well drained
*Substitute 1-1/4 cups Equal Spoonful for the packets.
**Substitute 1/2 cup Equal Spoonful for the packets.
Preparation
- Preheat oven to 350°F. Spray two 9-inch round cake pan with cooking spray; set aside.
- For Cake, beat bananas, eggs, yogurt, butter, vanilla and 3 tablespoons of the fruit concentrate in a mixing bowl on medium speed of electric mixer until blended. Gradually add combined dry ingredients until completely mixed. Divide batter evenly between prepared cake pans.
- Bake 20 to 25 minutes or until wooden pick inserted near center comes out clean. Cool cake in pans for 10 minutes. Remove and cool completely on wire racks.
- For Frosting, beat cream cheese until fluffy. Add Equal and remaining 1 tablespoon fruit concentrate, beating until smooth. Beat in crushed pineapple. Spread frosting evenly between layers and on top of cake.
- Refrigerate 1 to 2 hours before serving. Refrigerate any leftovers.
