White & Black Beans w/ Onions & Peppers
Serves 8
This chilled side dish satisfies the senses as far as appearance and taste. Use reduced sodium canned black beans and Equal® sweetener to help keep it “healthy”.
Ingredients
- 1 cup finely chopped red onions
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/3 cup red wine vinegar
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped red bell pepper
- 2 tablespoons minced parsley
- 3 packets Equal sweetener*
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 can (15 ounces) great Northern beans, rinsed and drained
- 1 can (15 ounces) black beans, rinsed and drained
- Red and green bell pepper rings, optional
*Substitute 2 tablespoons Equal Spoonful for the packets.
Preparation
- Cook and stir onions and garlic in oil in a medium skillet until crisp-tender. Remove from heat and cool. Stir in vinegar, chopped peppers, parsley, Equal, salt and pepper.
- Pour onion mixture over combined beans in a serving bowl; mix well. Garnish with pepper rings, if desired.
