Double Chocolate Fudgies

This is a rich chocolate brownie in an individual mini-muffin cup. They are perfect for gift giving or a school bake sale. No one will guess they have less calories than a traditional brownie.
Double Chocolate Fudgies
Ingredients
- 6 tablespoons butter, softened
- 1/2 cup unsweetened applesauce
- 2 eggs
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 24 packets Equal sweetener*
- 1/2 cup semi-sweet mini chocolate chips
- 6 tablespoons unsweetened cocoa
- 1 teaspoon baking powder
- 1/4 teaspoon salt
*Substitute 1 cup Equal Spoonful for the packets.
Preparation
- Preheat oven to 350°F. Line miniature muffin cups with foil or paper liners; set aside.
- Beat butter, applesauce, eggs and vanilla in a medium bowl until blended. Stir in combined flour, Equal, chocolate chips, cocoa, baking powder and salt until blended. Fill miniature muffin cups with approximately 1 rounded teaspoonful of dough.
- Bake 10 to 12 minutes or until wooden pick inserted in center comes out clean. Let cool in pan 1 to 2 minutes. Remove from pan and cool completely on wire rack.
