Fresh Strawberry Cream Pie
Serves 8
This is a great summertime dessert. A slightly sweetened cream cheese mixture is layered with sliced fresh berries, and topped with a glaze and more sliced berries.
Ingredients
**PIE FILLING**
**GLAZE**
- 2/3 cup unsweetened apple juice
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 3 packets Equal sweetener**
- 1/4 teaspoon almond extract
- Few drops red food coloring
- Fresh mint sprigs, optional
*Substitute 4 teaspoons and 1/4 cup Equal Spoonful for the packets.
**Substitute 2 tablespoons Equal Spoonful for the packets.
Preparation
- For Pie Filling, remove stems from several strawberries and slice to make 1 cup. Toss with 2 packets of the Equal. Spread strawberries over bottom of pie crust.
- Combine cream cheese, yogurt, remaining 6 packets Equal and lemon juice in a mixing bowl. Whisk until smooth. Spread cream cheese mixture over sliced strawberries.
- Set aside 1 large strawberry. Remove stems from remaining strawberries. Cut berries lengthwise in half. Place, cut side down, over cream cheese mixture, around outer-edge of pie shell, with pointed end of berry facing center of pie. Make several thin slices in last whole strawberry, starting near top and going to the pointed end. Press gently with fingers to form a “fan”. Place in center of pie.
- For Glaze, combine apple juice, lemon juice and cornstarch in a small saucepan. Cook and stir on medium heat until thickened and bubbly. Cook and stir 2 minutes more. Remove from heat. Stir in Equal, almond extract and red food color. Spoon over strawberries.
- Refrigerate at least 4 hours before serving. Garnish each serving with mint, if desired.
